docs: update for v1.0.0 release with ghostty-web

- Update ARCHITECTURE.md with ghostty-web details and native theme support
- Update ROADMAP.md marking migration complete
- Note patched ghostty-web fork from rcarmo/ghostty-web
- Document 11 built-in themes, IME support, smaller bundle size
- Bump version to 1.0.0
